Zucchini frittata

Ingredients:

  • 2 medium-sized zucchini, grated
  • 1 small onion, finely chopped
  • 4-5 large eggs
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil

 

Instructions:

  1. Start by grating the zucchini using a box grater or a food processor. Once grated, squeeze out any excess moisture using a clean kitchen towel or paper towels.

  2. In a large mixing bowl, whisk the eggs until they are well beaten. Add the grated zucchini, chopped onion, Parmesan cheese, salt, and pepper. Mix everything together until well combined.

  3. Heat olive oil in a non-stick skillet or frying pan over medium heat. Make sure the pan is large enough to hold the frittata mixture.

  4. Once the oil is hot, pour the egg and zucchini mixture into the pan, spreading it evenly. Reduce the heat to low and cook for about 10-12 minutes, or until the edges of the frittata start to set.

  5. Once the edges are set, carefully flip the frittata using a spatula or a large plate. Cook for an additional 8-10 minutes on the other side until the frittata is fully set and lightly browned.

  6. Once cooked, remove the frittata from the pan and let it cool for a few minutes. You can serve it warm or at room temperature.

  7. Cut the frittata into wedges and serve as a main course or as a side dish. It goes well with a side salad or some crusty bread.
