  • 2 ribeye steaks, 1 inch thick
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 tablespoons balsamic vinegar

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the sea salt, black pepper, garlic powder, and paprika. Rub the seasoning all over both sides of the steaks, then set them aside to come to room temperature.
  3. In a large mixing bowl, toss the sliced vegetables with 1 tablespoon of olive oil until evenly coated. Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
  4. Roast the vegetables in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized.
  5. While the vegetables are roasting, heat a large cast-iron skillet over medium-high heat. Add 1 tablespoon of olive oil to the skillet and swirl it around to coat the bottom.
  6. Once the skillet is hot, add the steaks and cook for 4-5 minutes per side for medium-rare, or until the desired level of doneness is achieved. Allow the steaks to rest for a few minutes before slicing.
  7. Once the vegetables are done roasting, drizzle them with balsamic vinegar and toss gently to coat.
  8. Serve the sliced steak with the roasted vegetables on the side and enjoy!
