Raspberry and pistachio dessert bars on a plate

Hey foodies!

Are you ready to indulge in a delicious treat that combines the sweetness of raspberry with the nutty goodness of pistachios? Look no further than these Raspberry Pistachio Dessert Bars! They’re buttery, crumbly, and oh-so-tasty. Plus, they’re easy to make, so you can whip them up whenever you’re in the mood for something sweet.

Let’s get baking!

  • 1 cup unsalted butter
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam
  • 1/2 cup shelled and chopped pistachios

  1. Preheat your oven to 350°F (180°C). Grease a 9-inch square baking dish and line it with parchment paper (to make cleanup a breeze).
  2. In a large mixing bowl, cream the butter and sugar together until light and fluffy (because we all need some fluffiness in our lives).
  3. In a separate bowl, whisk together the flour and salt. Add the flour mixture to the butter mixture and mix until just combined (you don’t want to overmix, trust us).
  4. Press two-thirds of the dough into the bottom of the prepared baking dish, making sure to press it down firmly and evenly (use those muscles!).
  5. Spread the raspberry jam evenly over the dough (no skimping on the jam!).
  6. Sprinkle the chopped pistachios over the jam (because every bite needs a little bit of nuttiness).
  7. Crumble the remaining dough over the top of the pistachios, pressing it down lightly (the crumbly texture is what makes these bars so irresistible).
  8. Bake for 25-30 minutes or until the edges are lightly browned (the anticipation is real!).
  9. Allow the bars to cool completely in the pan before slicing into squares (it’s hard to wait, but trust us, it’s worth it).

That’s it, folks! We hope you enjoy these Raspberry Pistachio Dessert Bars as much as we do. Happy baking!
