Roasted Mullet with Mash Potato and Bean Salad on a white plate

  • 4 mullet fillets
  • 4 large potatoes, peeled and chopped
  • 2 tablespoons of olive oil
  • 1 tablespoon of chopped fresh rosemary
  • Salt and pepper to taste
  • 1 can of mixed beans, drained and rinsed
  • 1 red onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of chopped fresh parsley
  • 1 tablespoon of red wine vinegar
  • 1 tablespoon of honey
  • 2 tablespoons of extra-virgin olive oil

  1. Preheat the oven to 400°F (200°C). Put on your favorite tunes and let’s get this party started!

  2. In a large pot, boil the potatoes until they’re soft enough to mash. Drain and mash them with a tablespoon of olive oil, salt, and pepper.

  3. In a small bowl, mix together the chopped rosemary, salt, pepper, and a tablespoon of olive oil. Rub the mixture over the mullet fillets and place them on a baking sheet.

  4. Pop the mullet in the oven and let it roast for 10-12 minutes or until it’s cooked through. While the fish is cooking, let’s whip up our zesty bean salad!

  5. In a medium-sized bowl, combine the drained mixed beans, diced red onion, minced garlic, chopped parsley, red wine vinegar, honey, extra-virgin olive oil, salt, and pepper. Give it a good toss until everything is well combined.

  6. Now, let’s assemble our dish! Spoon a generous portion of mashed potatoes onto each plate, then top with a roasted mullet fillet. Serve with a side of that delicious bean salad and enjoy!

Happy cooking!
