Maple Sweet Potato Mash

  • 3 large sweet potatoes, peeled and cubed
  • 1/2 cup chopped walnuts
  • 6 slices of streaky bacon, chopped
  • 2 tablespoons maple syrup
  • 3 tablespoons butter
  • 6-8 sage leaves, finely chopped
  • Salt and pepper to taste



  1. Place the cubed sweet potatoes in a pot of salted boiling water and cook for 15-20 minutes, or until they are tender enough to be easily pierced with a fork.

  2. While the sweet potatoes are cooking, toast the walnuts in a dry skillet over medium heat for 3-4 minutes, or until fragrant. Remove from the heat and set aside.

  3. In the same skillet, cook the chopped bacon until crispy. Remove the bacon from the skillet, leaving the rendered fat in the pan.
