  • 2 pie crusts (homemade or store-bought)
  • 4 cups fresh cherries, pitted
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 tsp cinnamon
  • 1/4 tsp almond extract
  • 1 tbsp unsalted butter, cut into small pieces
  • 1 egg, beaten



  1. Preheat your oven to 375°F (190°C).

  2. Roll out one of the pie crusts and fit it into a 9-inch pie dish. Trim the edges and set aside.

  3. In a large bowl, mix together the cherries, sugar, cornstarch, cinnamon, and almond extract until well combined.

  4. Pour the cherry filling into the pie crust, making sure it’s evenly distributed. Dot the top with small pieces of butter.

  5. Roll out the second pie crust and cut it into strips or shapes to create a lattice pattern on top of the filling. Alternatively, you can simply place the entire crust on top and cut slits to allow steam to escape.

  6. Brush the top crust with beaten egg to create a golden, shiny finish.

  7. Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.

  8. Allow the pie to cool for at least 30 minutes before slicing and serving.
