Chickpea salad bowl


  • 1 can of chickpeas, drained and rinsed
  • 2 cups of mixed salad greens
  • 1/2 red onion, thinly sliced
  • 1 cucumber, chopped
  • 2 ripe avocados, diced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and pepper, to taste



  1. First things first, chop the cucumber, slice red onion, and dice the avocados. Oh yeah, and don’t forget to chop up that fresh parsley too!

  2. In a large mixing bowl, toss together your chickpeas, mixed greens, red onion, cucumber, avocado, and parsley. Get those ingredients all mixed up and cozy in the bowl.

  3. In a small mixing bowl, whisk together your olive oil, lemon juice, salt, and pepper. Once everything is combined, pour this dressing over your salad.

  4. Sprinkle crumbled feta over the top of your salad. 

  5. Finally, give your salad one last toss to make sure everything is coated in that delicious dressing and the feta is evenly distributed throughout.
