Egg, bacon and cheese breakfast muffin

  • 6 slices of bacon
  • 6 eggs
  • 1/2 cup shredded cheddar cheese

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with six paper muffin cups or spray with non-stick cooking spray.

  2. Cook the bacon until crispy, then crumble it into small pieces.

  3. Crack the eggs into a large mixing bowl and beat them together until well-combined. Add in the shredded cheese, crumbled bacon, salt, and pepper, and mix until everything is evenly distributed.

  4. Pour the egg mixture into the prepared muffin tin, filling each cup about 2/3 of the way full.

  5. Bake the muffins in the preheated oven for 20-25 minutes, or until they are golden brown and cooked through. To check if they’re done, insert a toothpick into the center of one of the muffins – if it comes out clean, they’re ready!

  6. Remove the muffins from the oven and let them cool for a few minutes before serving. These muffins are delicious on their own, or you can serve them with a side of toast or fresh fruit for a more complete breakfast.
