Seafood fried rice

  • 3 cups cooked rice (preferably chilled or leftover)
  • 1/2 lb. shrimp, peeled and deveined
  • 1/2 lb. squid, cleaned and sliced into rings
  • 1/2 cup frozen peas
  • 1/2 cup chopped carrots
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 3 tbsp. vegetable oil
  • 3 tbsp. soy sauce
  • Salt and pepper, to taste
  • Green onions, sliced for garnish



  1. Start things off by heating up a tablespoon of oil in a large wok or frying pan over medium-high heat. Toss in those succulent shrimp and tender squid, and stir-fry them until they’re cooked to perfection. Then, set them aside and get ready to add them back in later.

  2. Next up, it’s time to toss in the veggies! Add another tablespoon of oil to the pan and throw in your chopped onions, garlic, peas, and carrots. Keep stir-frying until they’re perfectly tender and fragrant.

  3. Push the veggies to one side of the pan and add in the remaining tablespoon of oil to the other side. Crack in those eggs and scramble them up until they’re perfectly cooked.
