Seafood fried rice

Ingredients:

  • 3 cups cooked rice (preferably chilled or leftover)
  • 1/2 lb. shrimp, peeled and deveined
  • 1/2 lb. squid, cleaned and sliced into rings
  • 1/2 cup frozen peas
  • 1/2 cup chopped carrots
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 3 tbsp. vegetable oil
  • 3 tbsp. soy sauce
  • Salt and pepper, to taste
  • Green onions, sliced for garnish

 

Instructions:

  1. Start things off by heating up a tablespoon of oil in a large wok or frying pan over medium-high heat. Toss in those succulent shrimp and tender squid, and stir-fry them until they’re cooked to perfection. Then, set them aside and get ready to add them back in later.

  2. Next up, it’s time to toss in the veggies! Add another tablespoon of oil to the pan and throw in your chopped onions, garlic, peas, and carrots. Keep stir-frying until they’re perfectly tender and fragrant.

  3. Push the veggies to one side of the pan and add in the remaining tablespoon of oil to the other side. Crack in those eggs and scramble them up until they’re perfectly cooked.

  4. Now it’s time to add in the rice! Toss it into the pan and stir-fry everything together until the rice is heated through and perfectly coated in all those flavorful juices.

  5. Add your cooked shrimp and squid back into the mix, along with some soy sauce, salt, and pepper to taste. Give everything one last stir-fry to combine all those delicious flavors.
