Beef and mango curry served with rice

Ingredients:

  • 1 lb beef, cut into cubes
  • 1 mango, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can coconut milk
  • 1 tbsp vegetable oil
  • 1 tbsp tomato paste
  • 1/2 cup water
  • Fresh cilantro leaves, chopped for garnish

 

Instructions:

  1. Heat the vegetable oil in a large saucepan or Dutch oven over medium-high heat. Add the beef cubes and cook until browned on all sides.

  2. Add the onion, garlic, ginger, cumin, coriander, turmeric, paprika, chili powder, salt, and black pepper. Cook for 2-3 minutes, stirring frequently, until the spices are fragrant.

  3. Stir in the tomato paste, coconut milk, and water, and bring to a boil. Reduce the heat to low, cover, and simmer for 30-40 minutes or until the beef is tender.

  4. Add the diced mango to the pan and stir to combine. Cook for another 5-10 minutes, until the mango is heated through and the flavors have melded together.

  5. Serve the curry hot, garnished with fresh cilantro leaves. This dish goes well with rice, naan bread, or any other type of bread.
