Mushroom and Rocket Pasta Salad

Ingredients:

  • 8 oz fusilli pasta
  • 1 cup sliced mushrooms
  • 2 cups fresh rocket leaves
  • 1/2 red onion, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup pine nuts
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • Salt and pepper to taste

 

Instructions:

  1. Cook the pasta according to the package instructions until al dente.

  2. While the pasta is cooking, heat a pan over medium-high heat and add the sliced mushrooms. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are golden brown and tender.

  3. In a large bowl, combine the cooked pasta, sautéed mushrooms, rocket leaves, chopped red onion, and halved cherry tomatoes.

  4. In a small pan, toast the pine nuts over medium heat for a few minutes until they are lightly browned and fragrant.

  5. In a small mixing bowl, whisk together the olive oil, minced garlic, lemon juice, salt, and pepper to make the dressing.

  6. Pour the dressing over the pasta salad and toss to coat.

  7. Sprinkle the toasted pine nuts over the top of the salad and serve immediately.
