Spinach and feta quiche

Ingredients:

  • 1 pre-made pie crust
  • 4 large eggs
  • 1 cup of milk
  • 1 cup of spinach, chopped
  • 1/2 cup of crumbled feta cheese
  • 1/4 cup of chopped onions
  • 1 tablespoon of olive oil
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper

 

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. Place the pre-made pie crust in a 9-inch (23 cm) pie dish.
  3. In a skillet over medium heat, add the olive oil and sauté the onions until they are translucent.
  4. Add the chopped spinach to the skillet and continue to sauté until the spinach is wilted.
  5. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  6. Add the sautéed onions and spinach to the egg mixture and mix well.
  7. Pour the egg mixture into the pie crust.
  8. Sprinkle the crumbled feta cheese over the top of the quiche.
  9. Bake the quiche in the oven for 35-40 minutes or until the center is set and the crust is golden brown.
  10. Let the quiche cool for a few minutes before slicing and serving.
