Plum tart

For the crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1 egg yolk
  • 2 tbsp ice water

For the filling:

  • 6-7 ripe plums, pitted and sliced
  • 1/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract



  1. Preheat your oven to 375°F (190°C).

  2. To make the crust, combine the flour, sugar, and salt in a mixing bowl. Add in the butter and use a pastry blender or your fingers to mix until the mixture is crumbly.

  3. Add in the egg yolk and ice water, and mix until the dough comes together.

  4. Roll out the dough on a floured surface to about 1/4 inch thickness. Transfer the dough to a 9-inch tart pan, pressing it firmly into the bottom and sides. Trim any excess dough from the edges.

  5. To make the filling, mix the sugar, cornstarch, lemon juice, and vanilla extract in a mixing bowl. Add in the sliced plums and stir until they are coated evenly.

  6. Pour the filling into the prepared crust and spread it out evenly.

  7. Bake the tart in the preheated oven for 40-45 minutes, or until the crust is golden brown and the filling is bubbling.

  8. Let the tart cool for a few minutes before serving. You can also sprinkle some powdered sugar on top for an extra touch of sweetness.
