Ingredients:

  • 2 sheets of puff pastry, thawed
  • 1 1/4 cups of milk
  • 1/4 cup of heavy cream
  • 1/2 cup of sugar
  • 1/4 cup of cornstarch
  • 4 egg yolks
  • 1 tsp of vanilla extract
  • Powdered sugar for dusting

 

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Roll out one sheet of puff pastry on a lightly floured surface to a thickness of about 1/4 inch. Transfer the pastry to the prepared baking sheet and prick the surface all over with a fork to prevent it from puffing up too much.

  3. Bake the pastry in the preheated oven for 15-20 minutes, or until it is golden brown and crispy. Remove from the oven and allow it to cool completely.

  4. Meanwhile, in a medium-sized saucepan, whisk together the milk, heavy cream, sugar, cornstarch, egg yolks, and vanilla extract until smooth.

  5. Cook the mixture over medium heat, whisking constantly, until it thickens and comes to a boil. Reduce the heat to low and continue to cook for an additional 2-3 minutes, stirring occasionally.

  6. Remove the custard from the heat and transfer it to a bowl. Cover the surface with plastic wrap to prevent a skin from forming and let it cool to room temperature.

  7. Once the pastry has cooled, cut it in half lengthwise with a sharp knife to create two rectangular pieces.

  8. Spread the custard evenly over one of the pastry rectangles, leaving a 1/2 inch border around the edges.

  9. Place the second pastry rectangle on top of the custard, gently pressing down to secure it in place.

  10. Dust the top of the pastry with powdered sugar.

  11. Refrigerate the vanilla slice for at least an hour before serving to allow the custard to set.

  12. Once chilled, cut the vanilla slice into desired portion sizes, and enjoy!
