So grab a bottle of your favorite red, roll up your sleeves, and let’s get cooking!

  • 4-6 beef short ribs
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups red wine
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 2 sprigs fresh thyme
  • 1 bay leaf

  1. Preheat your oven to 325 degrees F.

  2. Season the beef short ribs generously with salt and pepper.

  3. Heat the olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Add the beef ribs and sear until they’re browned on all sides, about 10 minutes. Remove the ribs from the pot and set aside.

  4. Add the chopped onion and garlic to the pot and sauté until they’re softened and fragrant, about 5 minutes.

  5. Pour in the red wine, beef broth, and tomato paste, stirring to combine. Add the thyme and bay leaf, and bring the mixture to a simmer.

  6. Return the beef ribs to the pot, making sure they’re fully submerged in the sauce. Cover the pot with a lid and transfer it to the preheated oven.

  7. Bake for 2 1/2 to 3 hours, or until the beef is tender and falling off the bone.

  8. Once the beef is cooked to your liking, remove the pot from the oven and let it cool for a few minutes. Skim off any excess fat from the surface of the sauce.

  9. Serve the beef ribs hot, spooning the sauce over the top. Enjoy with your favorite sides, like mashed potatoes, roasted vegetables, or a crusty loaf of bread.

  10. Savor the rich, comforting flavors of this delicious red-wine braised beef rib recipe!
