Chicken pie

There’s nothing quite like a homemade chicken pie – it’s the ultimate comfort food that always hits the spot. This recipe is perfect for a cozy night in, a dinner party with friends, or just because you’re in the mood for some delicious comfort food. It’s easy to make and filled with tender chicken, veggies, and a creamy sauce that’s sure to make your taste buds dance with joy.

Ingredients:

  • 1 pound boneless, skinless chicken breast, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 cup frozen peas
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth
  • 1 cup milk
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 refrigerated pie crust

 

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.

  3. In the same skillet, add the onion and garlic and cook until the onion is translucent, about 3-5 minutes.

  4. Add the carrots and celery to the skillet and cook until they start to soften, about 5-7 minutes.

  5. Add the frozen peas to the skillet and cook for another 2-3 minutes.

  6. Sprinkle the flour over the veggies and stir to combine.

  7. Add the chicken broth, milk, thyme, salt, and pepper to the skillet and stir until the mixture is well combined.

  8. Bring the mixture to a boil, then reduce the heat and simmer for 5-10 minutes, until the sauce has thickened.

  9. Add the chicken back to the skillet and stir to combine.

  10. Pour the chicken mixture into a 9-inch pie dish.

  11. Unroll the pie crust and place it over the top of the chicken mixture. Use a knife to cut a few slits in the top of the crust to allow steam to escape.

  12. Bake for 30-35 minutes, or until the crust is golden brown.

  13. Remove the pie from the oven and let it cool for a few minutes before serving.
