Beef curry bowl

Ingredients:

  • 1 lb beef, cut into small cubes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp curry powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro, chopped (optional)

Instructions:

  1. Heat the vegetable oil in a large pot over medium-high heat.
  2. Add the beef cubes and cook until browned on all sides, about 5-7 minutes.
  3. Remove the beef from the pot and set aside.
  4. Add the onion to the pot and cook until softened, about 3-4 minutes.
  5. Add the garlic and ginger and cook for another 1-2 minutes.
  6. Add the curry powder, cumin powder, coriander powder, and turmeric powder to the pot and cook for 1-2 minutes, stirring constantly.
  7. Add the diced tomatoes, beef broth, and coconut milk to the pot and stir to combine.
  8. Return the beef to the pot and stir to combine with the sauce.
  9. Bring the mixture to a boil, then reduce the heat to low and simmer for 1-2 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
  10. Season with salt and pepper to taste.
  11. Garnish with chopped fresh cilantro, if desired.
  12. Serve hot with rice or naan bread.
