- 1 pound of pasta (we recommend using spaghetti)
- 2 cups of fresh spinach
- 1/2 cup of fresh basil leaves
- 1/2 cup of raw cashews
- 3 cloves of garlic
- 1/4 cup of nutritional yeast
- 1/4 cup of olive oil
- Salt and pepper to taste
- Optional: red pepper flakes for some added heat
Cook your pasta according to the package instructions. Make sure to salt the water generously for added flavor.
While the pasta is cooking, make your creamy green sauce. Start by adding the spinach, basil leaves, cashews, garlic, nutritional yeast, and olive oil to a blender or food processor.
Blend the ingredients until they form a smooth and creamy sauce. If the sauce is too thick, you can add a bit of water to thin it out.
Once the pasta is cooked, drain it and add it back to the pot. Pour the creamy green sauce over the pasta and stir until the pasta is well coated.
Season with salt and pepper to taste. If you like a bit of heat, add some red pepper flakes.
Serve your creamy vegan green pasta immediately and enjoy!
