Couscous salad with feta, chickpeas and herbs

Ingredients:

  • 1 cup couscous
  • 1 cup boiling water
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/2 red onion, thinly sliced
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • Salt and pepper to taste

 

Instructions:

  1. In a large bowl, pour the boiling water over the couscous and stir. Cover the bowl with a plate or plastic wrap and let it sit for 5-10 minutes, until the couscous has absorbed all the water and is tender.

  2. Fluff the couscous with a fork and add in the chickpeas, crumbled feta, chopped parsley and mint, and sliced red onion. Mix well.

  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.

  4. Pour the dressing over the salad and toss everything together until it’s well coated.

  5. Serve the salad immediately or refrigerate it for later. It’s great for meal prep or taking to work for lunch.
