Cinnamon roll cake

Ingredients for the cake:

  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons vegetable oil

Ingredients for the cinnamon filling:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 tablespoons ground cinnamon

 

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 10×15-inch jelly roll pan and line it with parchment paper.

  2. In a mixing bowl, whisk together the flour, baking powder, and salt.

  3. In a separate large mixing bowl, beat the eggs and granulated sugar until light and fluffy. This may take a few minutes.

  4. Add the vanilla extract and vegetable oil to the egg mixture and mix well.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Pour the cake batter into the prepared jelly roll pan and spread it evenly using a spatula.

  7. Bake in the preheated oven for 12-15 minutes or until the cake is lightly golden and springs back when touched.

  8. While the cake is baking, prepare the cinnamon filling. In a bowl, mix together the softened butter, brown sugar, and ground cinnamon until well combined.

  9. Once the cake is done, remove it from the oven and immediately turn it out onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper.

  10. Starting from one of the short ends, roll the cake up tightly in the towel. Allow it to cool completely in this rolled-up shape.

  11. Once the cake roll is completely cooled, carefully unroll it from the towel.

  12. Spread the cinnamon filling evenly over the cake, leaving a small border around the edges.

  13. Gently roll the cake back up, this time without the towel. Place it on a serving platter or plate with the seam side down.

  14. Slice the cinnamon cake roll into individual servings and serve.

 

This cinnamon cake roll is delicious on its own, without frosting. It makes a delightful treat for dessert or as a sweet snack. Enjoy!
