Carrot and Parsnip Mash


  • 4 large carrots, peeled and chopped
  • 3 parsnips, peeled and chopped
  • 4 tablespoons butter
  • 1 teaspoon dried thyme (optional)
  • Salt and pepper to taste


  1. Get a pot of water boiling. Toss in the carrot and parsnip chunks, and let them dance in the boiling water until they’re tender and easy to mash.

  2. Once the veggies are all tender, drain them. Pop them back into the pot and add the butter. Mash them until you achieve a smooth and creamy texture.
