So, let’s get hopping and make some bunny-shaped Easter cookies!

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • Pink food coloring (optional)
  • Mini chocolate chips or candies for eyes

  1. First things first, preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.

  2. In a large bowl, cream together the butter and sugar until light and fluffy, taking care to get it just right for maximum cookie deliciousness.

  3. Add in the egg and vanilla extract, and give it a good mix to combine everything well.

  4. Time to add in the flour mixture – gradually mix in the flour, baking powder, and salt until just combined.

  5. Add a couple of drops of pink food coloring to the dough and mix until the color is even, giving your cookies an extra pop of fun!

  6. Next, divide the dough in half and shape each half into a disk. Wrap each disk in plastic wrap and refrigerate for at least 1 hour. This is a great time to take a quick bunny dance break!

  7. Once chilled, roll out the dough to about 1/4 inch thickness on a lightly floured surface.

  8. Using a bunny-shaped cookie cutter, cut out bunny shapes from the dough and place them on the prepared baking sheet.

  9. Bake for 8-10 minutes, or until the edges are lightly golden, while taking a moment to breathe in the delicious aroma of freshly baked cookies.

  10. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

  11. Time to get creative! Use mini chocolate chips or candies to create the bunny’s eyes.

  12. And voila! You now have some adorable bunny-shaped Easter cookies ready to be devoured by family and friends alike!

Hop to it and enjoy!
