Blueberry chia pudding in a glass

  • 1/2 cup chia seeds
  • 2 cups unsweetened almond milk
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 1/2 cup fresh blueberries
  • 1/4 cup sliced almonds

  1. In a large bowl, combine the chia seeds, almond milk, vanilla extract, and maple syrup. Whisk together until the ingredients are well combined.

  2. Stir in the blueberries, making sure they are evenly distributed throughout the mixture.

  3. Cover the bowl and refrigerate for at least 2 hours, or overnight.

  4. Once the pudding has set, give it a good stir to make sure the chia seeds are evenly distributed. If the pudding is too thick, add a little more almond milk to thin it out.

  5. Spoon the pudding into individual bowls or jars and top with sliced almonds.

  6. Serve chilled and enjoy!
