Avocado Pesto Pasta with Smoked Salmon


  • 1 pound pasta
  • 1 avocado
  • 2 cloves garlic
  • 1/4 cup pine nuts
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • 4 ounces smoked salmon, chopped
  • Fresh parsley for garnish



  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a food processor or blender, combine avocado, garlic, pine nuts, Parmesan cheese, olive oil, lemon juice, salt, and pepper. Blend until smooth.
  3. Toss the avocado pesto with the cooked pasta until well coated.
  4. Fold in the chopped smoked salmon.
  5. Garnish with fresh parsley and serve immediately.
