Spicy chicken fried rice

Hey there foodies! Today I’m sharing with you my recipe for a spicy and delicious chicken fried rice that’ll knock your socks off. This recipe is perfect for those times when you’re craving something flavorful and filling.

Ingredients:

  • 2 cups cooked white rice
  • 1 lb chicken breast, diced into small pieces
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha sauce (or more to taste)
  • 1/2 teaspoon ground ginger
  • 2 eggs, lightly beaten
  • Salt and pepper, to taste
  • Green onions, chopped, for garnish

 

Instructions:

  1. Get ready to spice things up! Heat up a large skillet or wok over high heat, add in your vegetable oil and swirl that pan baby.

  2. Add your diced chicken to the pan and stir-fry that bad boy until it’s browned and cooked through. This should take about 5-7 minutes, depending on the size of your chicken pieces.

  3. Toss in your diced onion, minced garlic, and diced bell peppers to the pan. Stir-fry this for about 2-3 minutes until your veggies are slightly softened.

  4. It’s rice time! Add your cooked white rice to the pan and stir-fry for another 2-3 minutes until it’s heated through and slightly crispy.

  5. In a small bowl, mix together your soy sauce, sriracha sauce, and ground ginger. You want to make sure that sauce is looking and tasting spicy!

  6. Push your chicken and veggie mixture to one side of the pan and pour your lightly beaten eggs into the other side. Scramble those eggs up and mix them in with the chicken and veggies.

  7. Pour that spicy sauce you just made over everything in the pan and stir-fry for an additional 1-2 minutes, until everything is well coated and heated through.

  8. You gotta season this dish with some salt and pepper to taste. Don’t forget to taste it as you go and adjust your spices accordingly.

  9. Finally, let’s make it look pretty! Garnish your dish with some chopped green onions and serve that baby hot.
